Bao Buns – Chicken

Ingredients

  • ½ tbsp olive oil
  • 500g chicken mince
  • ½ cup hoisin sauce
  • 24 frozen bao buns
  • 1 carrot, shredded
  • 1 cucumber, thinly sliced
  • ½ purple cabbage
  • 1 bunch coriander leaves
  • 5 spring onions, sliced

Method

  1. Heat olive oil in a non stick fry-pan over medium-high heat
  2. Add chicken mince to pan and cook, stirring for 5-10 minutes or until cooked through
  3. Add hoisin sauce to pan and stir until all chicken is coated
  4. Place four frozen bao buns on a microwave-safe plate and sprinkle each bun with a few drops of water. Cover with plastic wrap and microwave on high for 1 minute 30 seconds.
  5. To assemble, add chicken to the bottom of each bun. Top with carrot, cucumber, coriander and spring onions.
  6. Serve 1 as a snack or 2-3 as a meal.
