Chipotle Roasted Cauliflower

Ingredients

  • 2 large heads (1 kg) of cauliflower, cut into medium sized florets, or 1kg of frozen cauliflower florets
  • 4 garlic cloves, minced
  • 4 tbsp olive oil
  • 3 tsp of chipotle spice mix
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp lime juice

Method

  1. Preheat oven to 200°C or prepare air fryer
  2. Place cauliflower in bowl, toss with oil, garlic, salt, pepper and chipotle seasoning
  3. Roast for 25-30 minutes (40-45 minutes if using frozen cauliflower) on baking sheet until the edges begin to crisp and cauliflower is just tender
  4. Remove from oven and drizzle over lime juice, serve hot

Serving Suggestions

  • A great recess snack for high school students
  • As a side dish served with hummus and 100g meatballs
  • Once cooled, mix into a salad with spinach, cherry tomatoes and chickpeas
