Ingredients
- 2 large heads (1 kg) of cauliflower, cut into medium sized florets, or 1kg of frozen cauliflower florets
- 4 garlic cloves, minced
- 4 tbsp olive oil
- 3 tsp of chipotle spice mix
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp lime juice
Method
- Preheat oven to 200°C or prepare air fryer
- Place cauliflower in bowl, toss with oil, garlic, salt, pepper and chipotle seasoning
- Roast for 25-30 minutes (40-45 minutes if using frozen cauliflower) on baking sheet until the edges begin to crisp and cauliflower is just tender
- Remove from oven and drizzle over lime juice, serve hot

- A great recess snack for high school students
- As a side dish served with hummus and 100g meatballs
- Once cooled, mix into a salad with spinach, cherry tomatoes and chickpeas
