Ingredients
- 150g wholemeal plain flour
- 60g cocoa
- 1 tablespoon baking powder
- 200g caster sugar
- 60g polyunsaturated margarine
- 2 eggs lightly beaten
- 1 teaspoon vanilla extract
- 60g icing sugar
Method
- Sift flour, cocoa, baking powder and sugar into a large bowl
- Rub the margarine into the flour mixture with your fingertips until it resembles coarse breadcrumbs
- Whisk together the eggs and vanilla then add to flour mixture, mix together with large spoon until the mixture comes together to form a dough
- Cover dough with cling film and refrigerate for 30 minutes
- Preheat oven to 200°C, line a baking tray with baking paper
- Sift the icing sugar into a bowl
- Shape dough into walnut sized balls and roll in icing sugar
- Place on baking trays leaving about 5cm between each cookie to allow for spreading
- Bake for 10-12 minutes or until just set when lightly touched, cookies will crack upon cooling. Nutrition information panel
