Ingredients
- 1 cup plain flour, sifted
- 1½ cups wholemeal plain flour, sifted
- 2 teaspoons baking powder
- ½ cup polyunsaturated margarine
- 1 cup caster sugar
- 2 medium eggs
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest
- Few drops yellow food colouring (if desired)
- 1 teaspoon vanilla essence
- ½ cup icing sugar
Method
- Preheat oven to 180°C, line two baking trays with baking paper
- In a medium bowl add flours and baking powder
- In a large bowl of electric mixer add margarine and sugar, mix until creamy then add eggs, lemon juice, zest, vanilla extract and 4 -5 drops of yellow food colouring (if using)
- Slowly add dry ingredients to wet ingredients and mix until well combined
- Place icing sugar into a small bowl
- Roll 1 tablespoon of mixture into balls then roll in icing sugar to coat well. Place balls onto baking sheet, leaving room for spreading
- Bake for 10 minutes
- Allow to cool on the tray slightly before transferring to a cooling rack.
