Mexican potato skins

Serves: 10 cups (5 skins in each)

Ingredients

  • Olive oil spray
  • 1 bag McCains potato skins (50 per bag)
  • 500g store bought salsa
  • 2 cups reduced fat cheese, grated

Method

  1.  Preheat oven to 180°C, spray an oven tray lightly with olive oil spray
  2. Place skins on tray, bake for 20 minutes
  3. Remove from oven and loosely but generously drizzle with salsa and sprinkle with cheese
  4. Bake for a further 10 mins
  5. Remove from oven, place 5 skins in a cup and serve immediately.
