Ingredients
- 3 cups oats
- 2 ripe bananas, roughly chopped
- 2 tablespoons maple syrup
- 1 egg

Carrot cake
- ½ teaspoon ground mixed spice
- 1 carrot, coarsely grated
Blueberry and cinnamon
- 1 teaspoon ground cinnamon
- 125g fresh blueberries
Strawberry and chocolate
- 2 tablespoons cocoa powder
- 125g strawberries, roughly chopped
Method
- Preheat oven to 180ºC. Line a tray with greaseproof paper
- Reserve two tablespoons of oats. Place remaining oats in a food processor, pulse until roughly chopped
- Place banana in a large bowl, mash with a fork until smooth
- Add maple syrup and egg to banana
Variation: add mixed spice, cinnamon or cocoa powder
Variation: add carrot - Add processed oats to mixture, stir to combine
- Using two tablespoons of mixture at a time, roll into balls, place on tray.
Flatten slightly, sprinkle with reserved oats
Variation: top with blueberries or strawberries, pushing into mixture - Bake for 15 minutes or until golden, cool before serving.
