Sausage Rolls

Serves: 0 small rolls (40g each); maximum 2 per serve  or 20 large rolls (80g each); maximum 1 per serve

Ingredients

  • 400g lean sausage mince
  • 300g lean chicken mince
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 cup fresh breadcrumbs
  • 3 tablespoons chopped parsley
  • ½  teaspoon ground nutmeg
  • 1 egg, lightly beaten
  • 4 sheets reduced fat puff pastry

Method

  1. Preheat oven 200°C, line baking tray with greaseproof paper
  2. Mix mince, onion, garlic, carrot, zucchini, breadcrumbs and parsley in a large bowl
  3. Cut pastry sheets in half
  4. Spoon mixture in a line in the middle of the half sheet of pastry
  5. Brush edge of pastry with egg, roll pastry, brush tops with more egg
  6. Cut each roll into 5 even pieces
  7. Bake 20-25 minutes or until golden
