Summer Porridge (Bircher Muesli)

Ingredients

Bircher

  • 3 cups rolled oats
  • 2 apples, grated
  • 3 cups 99% apple juice
  • ½ cup dried fruit (sultanas, raisins)
  • ½ mixed seeds (pepitas, chia)

Toppings

  • 2 cups reduced fat natural yoghurt
  • 2 cups fruit of choice (banana, strawberries, blueberries)
  • 2 cups granola or toasted muesli

Method

  1. Place all the Bircher ingredients in a container, mix well, cover and place in the fridge overnight
  2. To serve, place ½ cup of Bircher in a small bowl or serving container, top with ¼cup each of yoghurt and chopped fruit. Sprinkle with a tablespoon of granola.

Top Tips!

This is a great alternative to hot porridge in the warmer months. Top with any seasonal fruit and granola of choice for added crunch. Containers that have a separate compartment are perfect for keeping the granolafrom going soggy. Bircher can be made with half yoghurt, half juice if you prefer a creamier version.
