Ingredients
- 1½ cups plain wholemeal flour
- 1 teaspoon bicarb soda
- ½ teaspoon baking powder
- 1½ teaspoons cinnamon
- 1¼ cups mixed dried fruit
- 1 cup reduced fat vanilla yoghurt
- 1 large egg
- ¼ cup orange juice
- 2 teaspoons olive oil
- 2 teaspoons honey
Method
- Preheat oven to 180°C, line a 20cm x 30cm rectangular slice tin with greaseproof paper
- Place all dry ingredients in a large bowl, add dried fruit, mix to combine
- In a medium bowl combine yoghurt, egg, apple juice, oil and honey
- Make a well in centre of dry ingredients, add yoghurt mixture, stir until blended
- Pour batter into tin, smooth down
- Bake for 25-30 minutes or until cooked through and golden brown
- Cool before slicing, dust with icing sugar to serve.
