Ingredients
- 1 cup dried dates, roughly chopped
- 1 cup water
- 125g polyunsaturated margarine
- ¾ cup brown sugar
- 1½ teaspoons mixed spice
- 1 medium egg, lightly beaten
- 1½ cups self raising flour, sifted
- 1 teaspoon bicarb soda
- Icing sugar (optional)
Method
- Preheat oven to 180°C. Line a 19.5cm x 28.5cm slice tray with grease proof paper
- Place dates and water in a medium size saucepan and bring to the boil
- Remove from heat, add margarine, sugar and mixed spice. Stir until combined
- Allow to cool, add egg, flour and bicarb soda, stir to combine
- Spread mixture into prepared tin, bake for 25 – 30 minutes
- When cool, slice can be lightly dusted with icing sugar if desired.
